Quick Answer: What Makes a Great Chicken Biryani?

A great chicken biryani has long, separate, fragrant grains of rice, juicy chicken that has been marinated well, and layers that are sealed and slow-steamed on "dum" so the meat and rice share their flavours.

  • Rice: Aged long-grain basmati for most styles, kaima for Malabar, seeraga samba for Dindigul

  • Marination: Yoghurt, ginger-garlic, chilli, spices, mint and coriander

  • Layering: Rice and chicken stacked with fried onions, saffron and ghee

  • Dum: A sealed pot cooked low and slow

  • In Perth: Hyderabadi dum biryani is the most common style on menus

What Is Chicken Biryani?

Chicken biryani is a layered rice dish where marinated chicken and spiced, part-cooked rice are cooked together in a sealed pot. It is not fried rice and it is not a pulao.

In a pulao, rice and meat are cooked together in one go. In a biryani, the rice and meat are prepared separately first, then layered and finished with steam.

That layering is what gives you a plate with some grains white, some golden with saffron, and some deep orange from the masala.

What Makes a Great Chicken Biryani?

Four things decide it: the rice, the marinade, the layering and the dum. Get all four right and the dish smells good before the lid is even off.

1. The Rice

The rice should be cooked but firm, with every grain standing apart. Mushy, sticky rice is the most common sign of a poor biryani.

Most North Indian and Hyderabadi styles use aged, extra-long basmati. Ageing dries the grain, so it holds its shape during the long steam.

South Indian styles use different rice. Malabar (Thalassery) biryani uses short, fragrant kaima or jeerakasala rice. Dindigul and Ambur styles from Tamil Nadu use seeraga samba, a tiny grain with a strong aroma.

The rice is usually parboiled to about 70% before layering. It finishes cooking in the steam of the pot.

2. The Marination

In a good chicken biryani, the chicken is juicy and full of flavour right to the bone. That comes from marinating it for hours, ideally overnight.

A typical marinade has thick yoghurt, ginger-garlic paste, chilli, turmeric, garam masala, lemon, fried onions, mint and coriander. The yoghurt and lemon tenderise the meat.

Bone-in pieces are the classic choice. They stay moist and add depth to the rice.

3. The Layering

Layering is where the chicken and rice meet. The chicken usually goes at the bottom, with rice on top, then fried onions, mint, saffron milk and ghee.

Some cooks make two or three layers. Others do one thick layer of meat and one of rice.

The fried onions, called birista, matter more than people think. They bring sweetness and a deep brown colour.

4. The Dum

Dum means slow-cooking in a sealed pot. The lid is closed tight, often with dough, and the pot sits on very low heat so the steam stays inside.

The steam finishes the rice and pushes the aroma of the chicken, saffron and spices through every layer. A biryani without proper dum tastes like rice with curry on the side.

Kacchi vs Pakki: Two Ways to Do It

There are two main methods. In kacchi biryani, raw marinated meat is layered with part-cooked rice, and both cook together on dum. In pakki biryani, the meat is cooked first, then layered and steamed for a shorter time.

Hyderabadi biryani is the best-known kacchi style. Kolkata and most Tamil Nadu styles are pakki.

What Are the Main Styles of Chicken Biryani?

The four styles you are most likely to meet are Hyderabadi, Dindigul, Kolkata and Malabar. Each has its own rice, spice level and personality.

Hyderabadi Chicken Biryani

This is the most famous style of chicken biryani. It is spicy, aromatic and usually served with mirchi ka salan (a peanut and green chilli gravy) and raita.

Dindigul Biryani

Dindigul biryani comes from Tamil Nadu. The small seeraga samba rice gives it a different bite, and the flavour is tangy and peppery rather than rich.

Kolkata Biryani

Kolkata biryani grew out of the Awadhi (Lucknow) style. Kolkata chicken biryani is gentle and fragrant, and famous for its soft potato and boiled egg.

Malabar Biryani

Malabar biryani comes from northern Kerala. It uses short-grain kaima rice and is often topped with fried onions, cashews and raisins.

Where Can You Find Chicken Biryani in Perth?

Perth has a growing Indian food scene, and you can find chicken biryani across the metro area, from the CBD fringe to the southern and northern suburbs. Hyderabadi-style dum biryani is the most common.

A few verified places with biryani on the menu:

  • Deccan Biryani House (Thornlie and Warwick): A Hyderabadi-style specialist. Its menu lists chicken dum biryani and chicken 65 biryani.

  • Hyderabad Fusion: Reviewers often mention its Hyderabadi chicken dum biryani and chicken 65 biryani.

  • Burgers & Biryani (Subiaco): A halal spot that mixes classic biryanis with fusion burgers and street snacks.

  • GamaGama Indian Cuisine: Focuses on Kongunadu (western Tamil Nadu) flavours, a good pick if you want a South Indian style.

Menus, prices and opening hours change often. Check the restaurant's own page or a delivery app before you go.

How to Spot a Good Biryani in Perth

You can judge a plate in about a minute. Look for:

  • Separate grains: No clumps, no mush.

  • Mixed colours: White, yellow and orange rice in the same spoonful.

  • Moist chicken: It should pull off the bone easily.

  • Aroma: You should smell saffron, ghee and whole spices.

  • Sides: Raita and salan or a gravy, served with it.

If a chicken biryani arrives oily with dry chicken sitting on top, it was probably mixed with curry, not cooked on dum.

How Much Chicken Biryani Should You Order?

For most adults, plan on roughly 250–350 g of cooked biryani each, a bit more for big eaters. Reviews of Perth biryani places often note that a single portion can feed more than one person, so ask about sizes.

Chicken Biryani vs Other Biryanis

Chicken biryani is the most popular choice because it cooks faster and suits every style. Mutton and goat biryani take longer and taste richer. Veg biryani is lighter.

Chicken 65 biryani, now common in Perth, tops the rice with spicy fried chicken 65 pieces. It is a newer, Hyderabad-style twist rather than a traditional dum biryani.

If you love South Indian street food as much as biryani, look out for chopped, spicy kothu parotta, the Tamil street-food favourite, on the same menus.

Can You Make Chicken Biryani at Home in Perth?

Yes. Indian grocers across Perth stock aged basmati, saffron, fried onions and biryani masala, so making a good one at home is easy.

A simple home method:

  1. Marinate bone-in chicken in yoghurt, ginger-garlic, chilli, garam masala, lemon, mint and fried onions for at least 2 hours.

  2. Parboil soaked basmati in salted water with whole spices until 70% cooked.

  3. Spread the chicken in a heavy pot. Cover with the rice.

  4. Top with fried onions, mint, saffron milk and ghee.

  5. Seal the lid and cook on high for 5 minutes, then on the lowest heat for 25–35 minutes.

  6. Rest for 10 minutes before opening. Mix gently from the side.
